  • 1/2 cup honey (for syrup)
  • 1/2 cup water (for syrup)
  • 2 tablespoons fresh lemon juice per serving
  • Crushed ice (about 1 to 1½ cups per serving)
  • 1/4 cup sparkling water or club soda per glass (optional)
  • Optional garnishes: extra mint sprigs, lemon wheels, edible flowers

Instructions

  1. Make the Honey Simple Syrup: In a small saucepan, combine 1/2 cup honey and 1/2 cup water. Warm over medium heat, stirring frequently until the honey dissolves completely. Remove from heat and let cool to room temperature.
  2. Prep the Mint: Gently wash 10-12 fresh mint leaves per serving and pat dry.
  3. Muddle the Mint: Place mint leaves in a mixing glass or shaker. Add 2 tablespoons freshly squeezed lemon juice and 1½ tablespoons cooled honey simple syrup. Gently press the mint leaves about 8-10 times with a muddler or wooden spoon.
  4. Add Ice: Fill your glass with about 1 to 1½ cups crushed ice.
  5. Combine and Stir: Pour the muddled mixture over the crushed ice. Add 1/4 cup sparkling water or club soda if desired. Stir gently to mix and chill.
  6. Garnish and Serve: Top with a sprig of fresh mint and a lemon wheel or wedge. Slap the mint between your palms before garnishing to release aroma.

Notes

Do not over-muddle the mint to avoid bitterness. Let honey syrup cool before mixing to prevent wilting the mint. Crushed ice chills faster and dilutes slower than cubes. Adjust sweetness by varying honey syrup amount. Prepare syrup ahead and store refrigerated up to two weeks.
