  • 3 cups cubed day-old bread (sturdy white or sourdough recommended)
  • 1 1/2 cups smoked ham, diced (thick-cut preferred)
  • 1 1/2 cups sharp cheddar cheese, shredded
  • 1/2 cup chopped green onions
  • 1/2 cup shredded cheddar cheese (for topping)
  • Optional: pinch of paprika or smoked paprika

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
  2. In a large bowl, whisk together 8 large eggs, 2 cups whole milk, 1 teaspoon salt, 1/2 teaspoon black pepper, and 1/2 teaspoon dry mustard powder (if using) until smooth and slightly frothy, about 1-2 minutes.
  3. Add 3 cups cubed day-old bread to the egg mixture, gently pressing the bread down to absorb the liquid evenly. Let soak for about 5 minutes.
  4. Fold in 1 1/2 cups diced smoked ham, 1 1/2 cups shredded sharp cheddar cheese, and 1/2 cup chopped green onions. Stir gently to combine.
  5. Pour the mixture into the prepared baking dish, spreading evenly. Sprinkle the remaining 1/2 cup shredded cheddar cheese on top and dust lightly with paprika if desired.
  6. Bake uncovered for 40-45 minutes, or until the top is golden brown and the center is set but still slightly jiggly. A toothpick inserted should come out mostly clean.
  7. Let the casserole cool for 10 minutes before slicing and serving.

Notes

Use day-old bread to prevent sogginess. Bring eggs to room temperature for fluffier texture. Soak bread in egg mixture for at least 5 minutes. Use freshly shredded cheese for better melt quality. Grease pan well or line with parchment paper to avoid sticking. Tent with foil if top browns too quickly.
