Instructions

  1. Cut about 4 cups of watermelon into 1-inch bite-sized cubes.
  2. Peel and slice 2 medium cucumbers into thin half-moons.
  3. Finely chop about 1/4 cup fresh mint leaves, reserving a few whole leaves for garnish.
  4. In a small bowl or jar, combine the juice and zest of 1 lime, 2 tablespoons honey, and 3 tablespoons extra virgin olive oil. Whisk or shake vigorously until the honey is fully dissolved and the dressing is emulsified. Taste and adjust sweetness or acidity as desired.
  5. In a large bowl, gently combine the watermelon, cucumber, crumbled feta, and chopped mint.
  6. Pour the lime honey dressing over the salad and toss gently but thoroughly to coat every piece.
  7. Season with salt and freshly cracked black pepper to taste, adding flaky sea salt if desired. Toss gently again.
  8. Chill the salad in the refrigerator for about 15 minutes to let flavors meld and mint infuse.
  9. Garnish with reserved mint leaves and extra feta crumbles before serving.
