  • 2 large yellow onions, thinly sliced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon butter
  • 2 tablespoons yellow mustard
  • 1 teaspoon brown sugar (optional)
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Peel and slice two large yellow onions thinly.
  2. Heat 2 tablespoons olive oil and 1 tablespoon butter in a large skillet over medium heat.
  3. Add the sliced onions, sprinkle with a pinch of salt, and stir to coat.
  4. Cook slowly, stirring occasionally for about 20-25 minutes until onions are deep golden brown and smell sweet and rich. Add 1 teaspoon brown sugar and a pinch of black pepper near the end to boost caramelization.
  5. Preheat grill to medium-high heat (around 375°F). Clean and oil the grates.
  6. Place sausages on the grill and cook for 4-5 minutes per side, turning once or twice until nicely charred but not burnt.
  7. Remove sausages from heat and let rest for a couple of minutes.
  8. Slice sausages diagonally into ½-inch thick pieces.
  9. Pile caramelized onions over the sliced kielbasa and drizzle with 2 tablespoons yellow mustard.
  10. Serve immediately with extra mustard on the side if desired.

Do not rush caramelizing onions; slow cooking develops the best flavor. Score sausages lightly to keep juices inside and prevent flare-ups. Rest sausages after grilling for juiciness.
