A bright and cozy French toast casserole featuring lemon zest, juicy blueberries, and a buttery streusel topping. Perfect for lazy mornings or brunch gatherings.

Ingredients

Scale
  • 8 cups day-old brioche or challah bread, cut into 1-inch cubes
  • 6 large eggs, room temperature
  • 2 cups whole milk or half-and-half
  • ½ cup granulated sugar
  • Zest of 2 lemons
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1.5 cups fresh or frozen blueberries
  • 6 tablespoons unsalted butter, melted
  • ¾ cup all-purpose flour (for streusel)
  • ½ cup packed brown sugar (for streusel)
  • ½ teaspoon cinnamon (optional, for streusel)
  • 4 tablespoons cold unsalted butter, cut into small pieces (for streusel)

Instructions

  1. Cut brioche or challah into 1-inch cubes. If bread is not stale, toast cubes lightly in oven at 300°F for 10 minutes.
  2. In a large bowl, whisk together eggs, milk, granulated sugar, lemon zest, lemon juice, and vanilla extract until combined and slightly frothy.
  3. Place bread cubes in a 9×13-inch baking dish. Pour custard evenly over bread and press gently to soak. Cover and refrigerate for at least 2 hours or overnight.
  4. In a separate bowl, mix flour, brown sugar, and cinnamon. Add cold butter pieces and work into dry ingredients until mixture resembles coarse crumbs.
  5. Sprinkle blueberries evenly over soaked bread.
  6. Top with streusel mixture and drizzle melted butter over the entire casserole.
  7. Preheat oven to 350°F. Bake uncovered for 45-50 minutes until top is golden and custard is set but slightly jiggly.
  8. Let casserole cool for 10 minutes before slicing and serving.

Notes

Use day-old bread for best custard absorption. Soak bread overnight for perfect texture. Keep butter cold when making streusel for crumbly topping. Tent with foil if topping browns too quickly. Dairy-free and gluten-free substitutions available.
