  • 1 cup (240 ml) whole milk
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 8 ounces (225 grams) cream cheese, softened
  • ½ cup (60 grams) powdered sugar
  • 1 ½ cups fresh strawberries, hulled and sliced
  • 2 tablespoons butter, for cooking
  • Optional toppings: maple syrup, whipped cream, mint leaves

Instructions

  1. Prepare the custard soak: In a large bowl, whisk together 4 large eggs, 1 cup whole milk, 2 tablespoons granulated sugar, and 1 teaspoon vanilla extract until smooth. Set aside.
  2. Mix the cheesecake filling: Using an electric mixer or whisk, beat 8 ounces softened cream cheese with ½ cup powdered sugar until creamy and smooth. If cream cheese is cold, soften briefly in microwave.
  3. Slice the bread: Cut brioche into thick 1-inch slices, then cut each slice into halves or quarters for stacking.
  4. Soak the bread: Dip each bread piece into the custard soak for about 15 seconds per side. Drain excess liquid on a wire rack.
  5. Cook the French toast: Heat 2 tablespoons butter in a non-stick skillet over medium heat. Cook soaked bread pieces 2-3 minutes per side until golden brown and crisp.
  6. Assemble the towers: On serving plates, spread cheesecake filling on a piece of French toast, add sliced strawberries, then top with another piece of French toast. Repeat layers 3-4 times, finishing with strawberries on top.
  7. Optional finishing touches: Drizzle maple syrup, add whipped cream, and garnish with mint leaves.

Notes

Use day-old brioche bread for best soaking without falling apart. Soak bread about 15 seconds per side to avoid sogginess. Medium heat cooking prevents burning and ensures even cooking. Cream cheese should be softened but not melted for smooth filling. The cheesecake filling can be made a day ahead and refrigerated. For gluten-free, use gluten-free brioche. For dairy-free, substitute cream cheese with vegan coconut-based cream cheese and milk with almond milk.
