  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 700 g)
  • ½ cup (about 70 g) sun-dried tomatoes, chopped (packed in oil)
  • 3 cloves garlic, minced
  • 1 cup (240 ml) heavy cream
  • ½ cup (120 ml) chicken broth
  • ½ cup (50 g) grated Parmesan cheese
  • 1 ½ teaspoons Italian seasoning
  • ¼ teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides generously with salt, pepper, and half of the Italian seasoning. (Approx. 5 minutes)
  2. Optional: Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant but not browned. (Approx. 3 minutes)
  3. Place the seasoned chicken breasts in the bottom of the slow cooker. Scatter the chopped sun-dried tomatoes evenly over the chicken, then pour the chicken broth and heavy cream on top. Add the sautéed garlic if prepared separately. Sprinkle the remaining Italian seasoning, red pepper flakes (if using), and grated Parmesan cheese over everything. (Approx. 5 minutes)
  4. Cover and cook on low for 3.5 to 4 hours, or until the chicken is tender and cooked through (internal temperature should reach 165°F / 74°C). (Cooking time: 3.5 to 4 hours)
  5. Once done, taste the sauce and adjust seasoning with additional salt and pepper if needed. For a thicker sauce, remove the chicken and stir the sauce, then cook uncovered for 10-15 minutes on high. (Approx. 10-15 minutes)
  6. Serve the chicken on plates and spoon the creamy sauce and sun-dried tomatoes over the top. Garnish with fresh chopped basil or parsley if desired. (Approx. 5 minutes)

Notes

If your slow cooker runs hot, check the chicken at 3 hours to avoid overcooking. Stir the sauce gently once or twice during cooking to prevent cream separation. To thicken the sauce, mix 1 tablespoon cornstarch with 2 tablespoons cold water and cook uncovered on high for 10-15 minutes. For dairy-free, substitute heavy cream with coconut cream and Parmesan with nutritional yeast or omit.
