  • 8 large cinnamon rolls, cut into 1-inch cubes
  • 6 large eggs, room temperature
  • 2 cups whole milk
  • 1 cup heavy cream (optional but recommended)
  • ⅓ cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 2 teaspoons vanilla extract
  • ½ teaspoon salt
  • For the maple glaze:
  • 1 cup powdered sugar
  • 2 tablespoons pure maple syrup
  • 23 tablespoons milk or cream
  • ½ teaspoon vanilla extract (optional)

Instructions

  1. Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Cut 8 large cinnamon rolls into roughly 1-inch cubes.
  3. Spread the cubed cinnamon rolls evenly in the prepared baking dish, pressing lightly.
  4. In a large bowl, whisk together 6 large eggs, 2 cups whole milk, 1 cup heavy cream, ⅓ cup granulated sugar, 2 teaspoons ground cinnamon, 2 teaspoons vanilla extract, and ½ teaspoon salt until smooth.
  5. Pour the custard mixture evenly over the cinnamon rolls and gently press the rolls down to soak in the custard.
  6. Cover the baking dish tightly with plastic wrap or foil and refrigerate for at least 6 hours or overnight.
  7. Preheat the oven to 350°F (175°C).
  8. Remove the cover and bake uncovered for 45 to 50 minutes, until custard is set and top is golden brown. Test doneness with a toothpick.
  9. While the bake cools for 10 minutes, whisk together 1 cup powdered sugar, 2 tablespoons pure maple syrup, 2-3 tablespoons milk or cream, and ½ teaspoon vanilla extract until smooth and pourable.
  10. Drizzle the warm maple glaze generously over the French toast bake and serve warm.

Notes

Use room temperature eggs and milk for smooth custard. Slightly underbake homemade cinnamon rolls to prevent sogginess. If edges brown too fast, tent with foil halfway through baking. The bake can be refrigerated up to 24 hours before cooking. Maple glaze can be made ahead and stored in the fridge.
