Cozy One-Pan Pork Chops with Applesauce Easy Comfort Dinner Recipe

A simple, satisfying one-pan dinner featuring juicy pork chops cooked with applesauce and creamy mashed potatoes, perfect for cozy weeknight meals.

  • 4 bone-in pork chops (about 1-inch thick)
  • Salt and pepper, to taste
  • 2 tablespoons olive oil or butter
  • 1 medium yellow onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 cup unsweetened applesauce
  • 4 medium russet potatoes, peeled and cubed
  • 1/2 cup (120 ml) milk or cream, warmed
  • 2 tablespoons butter, softened
  • 1 teaspoon fresh thyme or rosemary, chopped (optional)
  • Salt and pepper, to taste (for mashed potatoes)

Instructions

  1. Peel and cube the russet potatoes into roughly 1-inch pieces. Place them in a pot of cold, salted water and bring to a boil over medium-high heat. Cook until fork-tender, about 12-15 minutes. Drain well and set aside.
  2. Pat the pork chops dry with paper towels. Season both sides generously with salt and black pepper.
  3. Heat olive oil or butter in your skillet over medium-high heat until shimmering. Add the pork chops and sear for about 3-4 minutes per side, until golden brown. Remove chops and set aside on a plate.
  4. Reduce heat to medium. In the same skillet, add the sliced onions and cook until translucent and soft, about 3 minutes. Add the minced garlic and sautΓ© for another 1-2 minutes until fragrant. Be careful not to burn the garlic.
  5. Return pork chops to the skillet nestling them in with the onions. Spoon the applesauce over the chops evenly. If you like herbs, sprinkle fresh thyme or rosemary on top now.
  6. Cover the skillet with a lid or foil and reduce heat to low. Let the pork chops cook through gently, about 8-10 minutes, until internal temperature reaches 145Β°F (63Β°C).
  7. While the pork finishes, mash the drained potatoes with warm milk (or alternative) and butter. Season with salt and pepper to taste. Mash until creamy but not gluey.
  8. Plate the mashed potatoes with a pork chop on top or alongside. Spoon extra applesauce and onions from the pan over everything and serve immediately.

Notes

If pan juices are thin, stir in a teaspoon of flour or cornstarch mixed with water during step 5 to thicken into a light gravy. Use a meat thermometer to avoid overcooking pork chops. Pat pork chops dry before searing for best crust. Can substitute boneless pork chops or chicken breasts. For dairy-free, use coconut milk and olive oil instead of milk and butter.
