  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cups (190g) all-purpose flour
  • Optional: 1/2 teaspoon ground cinnamon
  • Optional: 1/2 cup chopped walnuts or chocolate chips

Instructions

  1. Preheat your oven to 350Β°F (175Β°C). Grease your loaf pan lightly with butter or non-stick spray.
  2. Mash the bananas in a large mixing bowl until mostly smooth with a few small lumps.
  3. Add melted butter and mix gently.
  4. Stir in sugar, egg, and vanilla extract until combined.
  5. Add baking soda and a pinch of salt, stirring to blend.
  6. Fold in flour and cinnamon (if using) gently until no flour streaks remain.
  7. Fold in walnuts or chocolate chips if desired.
  8. Pour batter into the prepared loaf pan and smooth the top.
  9. Bake for 55-65 minutes, checking doneness with a toothpick starting at 55 minutes.
  10. Cool in the pan for 10 minutes, then transfer to a wire rack or plate to cool completely.

Notes

Use ripe bananas for best flavor. Do not overmix after adding flour to avoid dense bread. Tent with foil after 40 minutes if oven browns too quickly. Room temperature egg helps batter blend smoothly. Let bread cool properly before slicing to avoid gummy texture.
