  • 2 boneless, skinless chicken breasts (about 1 lb / 450g)
  • 8 cups (1.9 liters) homemade or low-sodium chicken broth
  • 2 medium carrots, peeled and sliced into thin rounds
  • 2 stalks celery, thinly sliced
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 6 oz (170g) wide egg noodles
  • 2 tsp fresh thyme leaves
  • 2 tbsp chopped fresh parsley
  • 2 tbsp olive oil or butter
  • Salt and freshly cracked black pepper to taste
  • Optional: fresh lemon juice or crushed red pepper flakes

Instructions

  1. Prepare the vegetables: wash and slice carrots and celery; finely chop onion; mince garlic (about 10 minutes).
  2. Heat olive oil or butter in a large stockpot over medium heat. Add onion, carrots, and celery; sauté for 5-7 minutes until softened and fragrant.
  3. Add minced garlic and fresh thyme leaves; stir for 1 minute until aromatic.
  4. Pour in chicken broth and add chicken breasts whole. Bring to a gentle boil, then reduce heat and simmer uncovered for about 20 minutes until chicken is cooked through (internal temp 165°F).
  5. Remove chicken breasts and shred with two forks. Return shredded chicken to the pot.
  6. Bring soup back to a gentle boil; add egg noodles and cook 6-8 minutes until al dente.
  7. Stir in chopped parsley; season with salt, pepper, and optional lemon juice. Simmer for 2 more minutes.
  8. Ladle soup into bowls and serve immediately.

Notes

Simmer gently to keep broth clear and chicken tender. Shred chicken while warm for best texture. Add noodles last to avoid mushiness. Fresh herbs brighten flavor; dried herbs can be used in smaller amounts added earlier. Season throughout cooking for best taste. For gluten-free, substitute noodles with gluten-free pasta or spiralized zucchini. Freeze broth and chicken separately from noodles to avoid mushy texture.
