Instructions

  1. Preheat your oven to 350Β°F (175Β°C). Place your cast iron skillet in the oven to warm up while you prepare the dough.
  2. In a large bowl, beat together the softened unsalted butter, granulated sugar, and light brown sugar until light and fluffy (3-4 minutes with an electric mixer or 6 minutes by hand).
  3. Add eggs one at a time, beating well after each addition. Stir in pure vanilla extract.
  4. In a separate bowl, whisk together all-purpose flour, baking soda, and salt until no lumps remain.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Do not overmix.
  6. Fold in the semi-sweet chocolate chips gently.
  7. Carefully remove the hot cast iron skillet from the oven and grease it lightly with butter or non-stick spray.
  8. Spoon the cookie dough into the skillet and spread evenly with a spatula, keeping it a bit rustic.
