  • 3/4 cup (150g) packed brown sugar
  • 1/4 cup (50g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • 1 cup (125g) all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup (135g) chocolate chips (semi-sweet or milk chocolate)
  • Pinch of coarse sea salt for sprinkling (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease your 8-inch cast iron skillet with butter or non-stick spray.
  2. In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar using a wooden spoon or electric mixer on medium speed for 2-3 minutes until light and fluffy.
  3. Add the egg and vanilla extract to the creamed mixture and beat until fully combined, scraping down the sides as needed.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients and stir gently just until combined. Do not overmix.
  6. Fold in the chocolate chips evenly throughout the dough.
  7. Transfer the dough to the prepared skillet and press it gently and evenly into the pan, making sure the dough reaches the edges.
  8. Sprinkle a pinch of coarse sea salt over the top, if using.
  9. Bake in the preheated oven for 25-30 minutes until the edges are golden brown and firm, and the center is slightly soft and gooey.
  10. Remove from oven and let cool for 10 minutes before slicing and serving warm.

Notes

If edges brown too fast, loosely cover skillet with foil halfway through baking. Do not overmix dough to avoid toughness. Softened butter should be pliable but not melting. The cookie continues cooking as it cools, so remove when center is just set but still soft. Variations include adding nuts, berries, or using gluten-free flour. For vegan version, replace butter with coconut oil and egg with flax egg.
