  • 3 large carrots, peeled and cut into chunks
  • 1 lb baby potatoes, halved
  • 1 medium yellow onion, sliced
  • 4 garlic cloves, minced
  • 2 cups low-sodium chicken broth
  • 2 tbsp olive oil (optional, for browning)
  • 45 fresh thyme sprigs
  • 1 tsp dried rosemary
  • Salt and black pepper to taste
  • 1 tbsp apple cider vinegar
  • 1 cup frozen peas (optional, stirred in near the end)

Instructions

  1. Rinse chicken thighs and pat dry. Peel and cut carrots into chunks, halve baby potatoes, slice onion, and mince garlic.
  2. Heat olive oil in a skillet over medium-high heat. Brown chicken thighs skin-side down until golden brown, about 4-5 minutes per side (optional).
  3. Place carrots, baby potatoes, and sliced onions at the bottom of the crockpot. Sprinkle with salt and pepper. Arrange browned chicken thighs on top.
  4. Sprinkle minced garlic, thyme sprigs, and dried rosemary evenly over the chicken. Pour chicken broth around the edges of the crockpot.
  5. Cover and cook on low for 4 to 5 hours until chicken is tender and potatoes are soft.
  6. Stir in frozen peas and apple cider vinegar, cover and cook for an additional 15 minutes (optional).
  7. Remove thyme sprigs, taste and adjust seasoning with salt and pepper if needed. Serve hot straight from the crockpot.

Notes

Browning the chicken before slow cooking adds flavor and color but can be skipped. Use bone-in thighs for best moisture. Keep lid closed during cooking to retain heat. If sauce is too thin, remove chicken and veggies and simmer liquid on stove or thicken with cornstarch slurry. Frozen peas and apple cider vinegar added near the end brighten the dish.
