A warm, cinnamon-sugar infused French toast bake inspired by churros, perfect for easy summer mornings and special breakfasts.

Ingredients

Scale
  • 1 loaf thick-cut brioche or challah bread, cut into 1-inch cubes (day-old or slightly stale)
  • 6 large eggs, room temperature
  • 2 Β½ cups whole milk (can substitute almond or oat milk for dairy-free)
  • Β½ cup granulated sugar (for custard soak)
  • 2 teaspoons vanilla extract
  • 2 tablespoons ground cinnamon
  • ΒΌ teaspoon salt
  • 4 tablespoons unsalted butter, melted
  • Cinnamon Sugar Topping:
  • Β½ cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 2 tablespoons unsalted butter, melted (to drizzle on top)

Instructions

  1. Cut brioche or challah into 1-inch cubes. If bread is fresh, toast cubes lightly in oven at 300Β°F for 8-10 minutes to dry slightly.
  2. In a large bowl, whisk together eggs, whole milk, granulated sugar, vanilla extract, ground cinnamon, and salt until smooth and slightly frothy (1-2 minutes).
  3. Gently fold bread cubes into custard mixture, ensuring all pieces are coated. Let sit for 15 minutes, stirring gently every 5 minutes for even soaking.
  4. Lightly butter a 9×13-inch baking dish, coating bottom and sides.
  5. Pour soaked bread and custard into prepared dish, spreading evenly. Drizzle 4 tablespoons melted butter over the top.
  6. In a small bowl, mix granulated sugar and ground cinnamon for topping. Toast mixture in a dry skillet over medium heat for 2-3 minutes, stirring constantly until fragrant and slightly golden.
  7. Sprinkle toasted cinnamon sugar evenly over the bake. Drizzle remaining 2 tablespoons melted butter on top.
  8. Cover dish loosely with foil and bake at 350Β°F for 35 minutes. Remove foil and bake an additional 15-20 minutes until top is golden and custard is set but slightly jiggly.
  9. Let bake cool for 10 minutes before slicing and serving.

Notes

Use sturdy bread like brioche or challah to soak custard without falling apart. Toast bread cubes if fresh to prevent sogginess. Toast cinnamon sugar topping for extra crunch and flavor. Cover with foil during initial baking to prevent drying out. Let bake rest before slicing. For dairy-free, substitute milk and butter accordingly. For gluten-free, use gluten-free brioche or firm gluten-free bread.
