Classic Mom’s Chicken Salad on Flaky Croissants

A quick and easy chicken salad recipe paired with buttery, flaky croissants for a nostalgic and satisfying sandwich perfect for picnics, brunch, or a comforting lunch.

Ingredients

  • 3 cups cooked chicken, shredded or chopped (rotisserie chicken works great)
  • 1/2 cup mayonnaise (Hellmann’s preferred)
  • 1 tablespoon Dijon mustard
  • 1 cup celery, finely chopped
  • 1/2 cup red grapes, halved (optional)
  • 2 tablespoons green onion, chopped
  • 1 tablespoon fresh lemon juice
  • Salt and pepper to taste
  • 4 large flaky croissants, split

Instructions

  1. Prepare the chicken by shredding or chopping into bite-sized pieces.
  2. Finely chop celery, halve grapes, and slice green onions.
  3. In a large bowl, whisk together mayonnaise, Dijon mustard, fresh lemon juice, salt, and pepper.
  4. Add shredded chicken, celery, grapes, and green onions to the dressing and gently fold until well coated.
  5. If desired, warm croissants on a baking sheet at 350°F for about 5 minutes, then split horizontally to create a pocket.
  6. Spoon the chicken salad generously into each croissant and serve immediately.

Notes

Chill chicken salad for at least 30 minutes before assembling to meld flavors and prevent soggy croissants. Warm croissants gently to maintain flakiness. Avoid overmixing to keep texture. For lighter versions, substitute Greek yogurt for mayonnaise. Gluten-free croissants or bread can be used as alternatives.
