  • 1 ¾ cups (350g) granulated sugar
  • 4 large eggs, at room temperature
  • 2 teaspoons pure vanilla extract
  • 1 cup (240ml) whole milk, warmed slightly
  • ½ cup (120ml) fresh strawberry puree
  • 1 cup (227g) unsalted butter, softened (for frosting)
  • 4 cups (480g) powdered sugar, sifted
  • ¾ cup (180ml) fresh strawberry puree (for frosting)
  • 2 tablespoons (30ml) heavy cream
  • 1 teaspoon pure vanilla extract (for frosting)
  • Pinch of salt
  • Optional: fresh strawberries, sliced, for decorating
  • Optional: simple syrup (¼ cup sugar dissolved in ¼ cup water) for brushing layers

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 8-inch round cake pans and dust with flour or line with parchment paper.
  2. Sift together flour, baking powder, and salt in a medium bowl; set aside.
  3. Beat softened butter and granulated sugar on medium speed until light and fluffy, about 6-7 minutes.
  4. Add eggs one at a time, beating well after each addition, then mix in vanilla extract.
  5. Alternately add dry ingredients and warmed milk to the butter mixture, starting and ending with dry ingredients. Mix gently until just combined.
  6. Fold in ½ cup fresh strawberry puree carefully with a spatula to keep batter light.
  7. Divide batter evenly between prepared pans and smooth tops. Bake 25-30 minutes or until a toothpick comes out clean.
  8. Cool cakes in pans for 10 minutes, then turn out onto wire racks to cool completely. Optionally brush layers with simple syrup.
  9. For frosting, beat softened butter until creamy. Gradually add powdered sugar, alternating with strawberry puree, heavy cream, vanilla extract, and salt. Beat until smooth and fluffy.
  10. Assemble cake by placing one layer on a plate, spreading frosting on top, adding second layer, and covering entire cake with remaining frosting. Decorate with sliced strawberries if desired.
  11. Chill cake for at least 30 minutes before slicing to set frosting and meld flavors.

Notes

Use room temperature ingredients for best results. Be gentle when folding in strawberry puree to keep batter airy. Brush cake layers with simple syrup to keep moist. Chill frosting if too soft before applying. Use an offset spatula for smooth frosting application.
